This healing veggie broth is delicious and it is packed with vitamins, minerals and antioxidants!
Ingredients
- 2 tablespoon extra virgin olive oil
- 2 onions, roughly chopped
- 4 celery stalks, roughly chopped
- 3 carrots, roughly chopped
- 2 teaspoons of crushed garlic
- 2 bay leaves
- 1 tablespoon mixed dried Italian herbs
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- 1 teaspoon ground turmeric
- 1 tablespoon apple cider vinegar
- 10 cups of water
Method
- In a large pot or slow cooker, add the extra virgin olive oil, the onion, celery, carrots, and garlic over medium-high heat
- After the start to soften, bay leaf, dried herbs, sea salt, pepper, turmeric, ginger, apple cider vinegar and water.
- Slow cook for 3 hours on low
- Strain the liquid, and voila!
You can easily freeze some of it if you do not wish to use all the broth at once.
