Veggie Broth Recipe

This healing veggie broth is delicious and it is packed with vitamins, minerals and antioxidants!

Ingredients

  • 2 tablespoon extra virgin olive oil
  • 2 onions, roughly chopped
  • 4 celery stalks, roughly chopped
  • 3 carrots, roughly chopped
  • 2 teaspoons of crushed garlic
  • 2 bay leaves
  • 1 tablespoon mixed dried Italian herbs
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground turmeric
  • 1 tablespoon apple cider vinegar
  • 10 cups of water

Method

  1. In a large pot or slow cooker, add the extra virgin olive oil, the onion, celery, carrots, and garlic over medium-high heat
  1.  After the start to soften, bay leaf, dried herbs, sea salt, pepper, turmeric, ginger, apple cider vinegar and water.
  2.  Slow cook for 3 hours on low
  3.  Strain the liquid, and voila!

You can easily freeze some of it if you do not wish to use all the broth at once.
