Made with Spelt bread, this version is a more alkalising alternative, and gives a twist to the traditional recipe!
Ingredients (for one person):
- 2 slices of Spelt Bread
- 1 tablespoon of Olive Oil
- 1 garlic or tsp of garlic paste
- 1 Tomato
- 1/2 Red Onion, finely chopped
- A couple of Basil leaves, chopped
- 1 tablespoon Olive Oil for drizzling, Himalayan salt and pepper to taste
Method:
- Place the slices of bread on a grill plate or a frying pan with olive oil
- Grill on both sides.
- Take the bread out, rub one side with garlic cloves, or add a bit of garlic paste.
- Cut the tomatoes, and combine with chopped onion and olive oil.
- Season to taste with black pepper and Himalayan salt
